Title: Local Boyz Hawaiian Cafe Shrimp Stir-Fry

6 To 8 raw med-large shrimp shelled and deveined
1tsVegetable oil
1tsOlive oil
1/4cChicken broth; divided
1/2cBroccoli flowerets cut in 1/2-inch chunks
1/2cCauliflower flowerets cut in 1/2-inch chunks
1/2cCarrots; cut julienne
1/2cEdible pod peas
1/2tsOriental sesame oil
1tbOyster sauce

This meal goes together in a few minutes and has a fresh, clean flavor. chef Noho Marchesi uses very little fat, only enough sesame oil to give the dish its accent, and he stir fries everything quickly to tender-crispness. To make the dish even speedier, try buying pre-cut, stir fry vegetables from your supermarket.

With a small sharp knife, cut 1/2-inch deep lengthwise down the back of the shrimp to butterfly it; set aside. (butterflying the body will make it cook faster).

In a wok or large skillet, combine the vegetable oil and olive oil, and heat slightly over medium heat. Swirl the oil around until it coats the bottom of the wok or skillet. Pour off any excess oil. Turn the heat up to high and add the shrimp and 1 tablespoon of the chicken broth. Stir fry about 1 minute or until the shrimp just begins to turn pink.

Add the broccoli, cauliflower, carrots and edible pod peas all at once and stir fry for 30 seconds. Drizzle in the sesame oil and oyster sauce and stir fry for 15 seconds. Add the remaining 3 tablespoons chicken broth and continue to stir fry for 2 to 3 minutes or until the vegetables are tender crisp.

Noho Marchesi is the owner and chef of the Local Boyz Hawaiian Cafe in Portland Oregon. Originally from Hawaii, he first opened the Local Boyz Cafe in Corvallis, Oregon in 1993 with his brother Roy. He moved to Portland in 1994 to start his own Local Boyz. The dishes created in his kitchen are simple but tasty Hawaiian family style meals based upon memories of growing up in Hawaii and all the good Hawaiian food enjoyed during the years. The recipes have been begged and borrowed from family and friends in Hawaii.
